Cashew Parsley Crema (aka The One True Sauce)

INGREDIENTS
1.5 cups raw cashews + 6 pitted dates (soaked for an hour in hot water, or overnight in room temp.)
Handful of fresh parsley (finely chopped)
1/2 cup water (less or more depending on preferred consistency)
1 juicy lemon (1 tbsp. Juice)
3/4 tsp. Salt
Optional (omit when babying your digestive fire)
10 cloves roasted garlic (~1 head, you can add more if you love it)
1 heaping tsp. dijon mustard
INSTRUCTIONS
Blend in a high-powered blender (Vitamix or blendtec or other similar machine or else the cashews will not turn to cream). It helps to add parsley first, then cashews, then the rest! Serve over your choice of grain and steamed vegetables, or get fancy and try it over roasted veg (as pictured).
